Five-Ingredient Spicy Sausage Cast Iron Pizza

This *DEEP DISH* cast iron pizza is about to be your new go-to weeknight dinner. We’re leaning on store-bought pizza dough to keep things easy. The dough is topped with spicy tomato sauce and Italian sausage then baked in a preheated cast iron skillet which keeps the crust nice and crispy. As soon as it comes out of the oven it’s topped with cool and creamy burrata cheese. It’s heavenly!

This Cast Iron Skillet Pizza will bring your delivery pizza habit to a halt! There’s simply no need to order in once you have this recipe in your repertoire. Sweet Italian sausage, spicy Calabrian chilis and creamy burrata cheese are the perfect toppings for this five-ingredient homemade pizza.

No pizza oven–no problem! For super crispy pizza without a pizza oven my trick is to bake in a preheated cast iron pan. Meaning, while you’re preheating your oven to 425 F your cast iron is inside getting hot too. The result is a pizza dough that is just the right amount of crispy and chewy! If you like a slightly charred blackened crust pop it under the broiler for 2-3 minutes. Just keep a close eye on it so it doesn’t burn!

You can use any type of cast iron pan for this recipe. I’m partial to the brand Lodge. Their pans are sturdy and inexpensive. Pan size is not super important here. Anywhere between 10-15 inches will work.


Ingredients You’ll Need:

A stainless steel bowl with pizza dough, a small bowl with oil-packed Calabrian chilis, crushed tomatoes, two links of sausage, two balls of burrata

Recipe Step by Step:

Step 1. Preheat Your Skillet and Prep the Toppings

Place your cast iron pan into the oven and turn the oven to 425F. Get all your toppings ready; mix together the spicy tomato sauce and remove the casings from the sausage.

Step 2. Bake

Roll out the pizza dough just until its large enough to cover the surface of the pan. Place the dough into the pan and top evenly with sauce and sausage. Bake for 20-25 minutes until puffed and golden brown.

Pro Tip: For pizza dough thats easy to roll, make sure your dough is room-temperature by taking it out of the fridge 1-2 hours before baking.

Step 3. Top with Burrata and Serve

Let the pizza cool for about 5 minutes then remove it from the pan, top with burrata and serve right away!

Ingredients

  • 1 16 oz pre-made pizza dough room temperature
  • 2 tbsp olive oil
  • 2 tbsp minced Calabrian chilis oil-packed
  • 1/2 c crushed canned tomatoes
  • 1/2 tsp kosher salt
  • 2 Italian sausage links casing removed
  • 1 4 oz ball burrata

Instructions

  • Place your cast iron skillet in the oven then preheat the oven and pan to 425 F. In a small bowl stir together the crushed tomatoes, chilis and salt. Set aside.
  • Stretch out the pizza dough using your hands in a circular motion, then lay it on a flat surface and flatten it out using a rolling pin just until it's large enough to cover the surface of your pan. If your dough is sitcky, you may need to use a bit of flour.
  • Carefully take the preheated cast iron pan out of the oven. Pour the olive oil into the pan then tilt and turn it to allow the oil to spread and coat the entire surface of the skillet. Gently place the pizza dough into the pan–it may sizzle a bit, thats a good thing! Next, spread the spicy tomato sauce over the top then the sausage. Bake for 20 minutes. If you like a slightly charred blackened crust pop it under the broiler for 2-3 minutes. Just keep a close eye on it so it doesn't burn!
  • Remove the pizza from the oven and let cool for 5 minutes. Carefully lift the pizza from the pan with a spatula. Tear the burrata into small pieces and distribute over the top of the pizza. Drizzle with a spoonful of the Calabrian chili oil then slice into 6 pieces and serve!

Ingredient Notes and Substitutions:
  • Calabrian Chilis: Calabrian chili peppers originate from the Calabrian region of Italy. They are harvested and sold packed in oil, made into a paste, or dried. They’re super-flavorful! If you can’t find them in grocery stores they’re in specialty Italian markets and online. 
  • Sausage: I use a mild Italian pork sausage for this recipe but you could also use chicken, turkey or a plant-based sausage.
  • Burrata: Burrata is a soft shell of Italian cow-milk mozzarella wrapped around a creamy center.  Fresh mozzarella is a suitable swap for burrata.
