My super simple, no fuss, one-bowl recipe for blueberry spelt flour muffins! Healthy, delicious and no special equipment required!
I love to whip up a batch of blueberry muffins in the morning while I’m waiting for my coffee to brew! That’s the great thing about this super simple one-bowl recipe, it really only takes a few minutes to stir together the batter and fill up the muffin tins. No bulky stand mixer required!
What is spelt four?
Spelt is an ancient grain that’s similar to wheat. Spelt flour has a nutty, slightly sweet flavor and can be used in most recipes that call for all-purpose or whole wheat flour. Flour made from spelt is also a good source of fiber!
One-Bowl Blueberry Spelt Muffins Tips→
–Make these muffins the night before. Make the batter and scoop it into the muffin tin then put the whole thing in the refrigerator and take it out in the morning and bake as directed.
-Use frozen blueberries: Frozen berries work just fine in this recipe! I recommend tossing the frozen blueberries with a tsp of spelt flour before folding them into the batter. This will prevent your muffins from turning blue.

One-Bowl Blueberry Spelt Muffins
- 2 c spelt flour
- 1 c sugar
- 1 c blueberries plus extra for sprinkling on top
- 2 eggs
- 1/2 c butter melted
- 1/2 c milk
- 1 tsp vanilla
- 2 tsp baking powder
- 1/2 tsp salt
- 2 tbsp turbinado sugar
- Preheat the oven to 375. Line a 12-cup muffin tin with paper liners.
- In a large bowl whisk together the sugar and eggs. Next, fold in the dry ingredients along with the milk and vanilla. After that, gently fold in the blueberries and melted butter, until evenly distributed, do not over mix.
- Scoop the batter into the prepared muffin tin. Sprinkle each muffin with a little bit of turbinado sugar and a few extra blueberries. Bake for 30-35 minutes, until lightly golden. Let the muffins cool in the pan for about 10 minutes.
