Admittedly this recipe is more of a how-to assemble a few different ingredients to make healthy breakfast tacos. Isn’t that how breakfast should be though? Most of us are in a rush in the morning a luckily these paleo breakfast tacos can be made quickly and easily when you’re on the go!
Paleo breakfast tacos are a quick and easy gluten-free, grain-free breakfast packed with eggs and sausage then topped with salsa, avocado, and cilantro!
I will be forever grateful to the city of Los Angeles for introducing me to the breakfast burrito. They’re packed full of greasy fried potatoes, chorizo, eggs, cheese, and salsa. They are the cure for even the darkest of hangovers. They’re also not exactly health food. But, they did inspire these healthy paleo breakfast tacos! These you could eat anytime and not feel an ounce of guilt.
Paleo breakfast tacos are quick and easy to make. Use one pan to crisp up the sausage and scramble the eggs then throw everything into a warmed tortilla, top with you’re favorite salsa, avocado, hot sauce, cilantro, etc.

Paleo Breakfast Tacos
- 4 Siete Almond Flour Tortillas
- 4 eggs, beaten
- 2 large sausage links (or 4 small)
- jalapeño slices
- lime wedges
- Warm a non-stick pan over medium heat. Chop the sausage in into bite-sized pieces and cook it in the pan until golden brown. Take the sausage out of the pan, turn the heat to low. Add in a splash of oil and the beaten eggs. Scramble the eggs, stirring continuously. Season with salt and pepper.
- Warm the tortillas either in the microwave or toast them in a dry pan. Fill each tortilla with some of the egg and sausage then top with your desired toppings! Enjoy immediately!
