Creamy Tahini Caesar Dressing

Creamy, tangy, garlicky tahini caesar salad dressing!

Ingredients

  • 1/2 c tahini
  • 1/2 c grated parmesan cheese
  • 1/4 c lemon juice
  • 2 tbsp dijon mustard
  • 2 filets anchovies
  • 2 cloves garlic
  • water about 1/2c, see note!
  • freshly cracked pepper

Instructions

  • Blend all ingredients, except the water in a blender or food processor. Pour the water into the blender slowly until the dressing is smooth and pourable — season with fresh cracked pepper. Toss with romaine lettuce, croutons, and parmesan cheese! 

Notes

Tahini tends to "seize" or get very thick when you blend it with other ingredients, that's where the water comes into this recipe. You may not need a full half cup of water or you may need more, it depends on the tahini really. Just add enough so that the dressing is smooth and pourable.
